  • Hawaiian name for Bigeye Tuna (Thunnus obesus [s], Mebachi [j]) or Yellowfin Tuna (Thunnus albacares [s], Kihada [j]). 
  • Try it raw (sashimi, sushi, poke), or seared or blackened

  • Japanese MSG.
  • Hawaiian name for Skipjack Tuna (Katsuwonus pelamis [s], Katsuo [j]). 
  • Try it raw (sashimi, poke), seared (tataki), or dried.
  • My favorite place to get it: 

AKU PALU

  • Traditionally made from the head or stomach/intestines from raw aku prepared with kukui and Hawaiian chili peppers. Nowadays it’s made with the meat of the fish rather than the intestines.
  • Hawaiian sea salt containing red clay.
  • The Okinawan version of the corndog. 
  • A whole hot dog placed on a stick that is then dipped in andagi (see below for description) batter and deep fried.
  • Okinawan deep-fried doughnut (consisting of flour, sugar, eggs, and milk) fried in hot oil. 
  • Hawaiʻi’s version is slightly different than the Okinawan version since it call for milk (sometimes evaporated milk).
  • My favorite place to get it: Aloha Andagi, Kailua Hongwanji bon dance.
